How do you Brew your Coffee?

"North East" consists of not one but seven Indian States - Arunachal, Assam, Meghalaya, Nagaland, Manipur, Mizoram and Tripura. All 7 States have coffee cultivation. So while coffee from Meghalaya is also North East coffee, not all North East coffee is from Meghalaya.
Thank you for the geography lesson. Having lived in Meghalaya, Arunachal and Assam, I can assure you I know the difference.
 
We use filter coffee. There is the filter on top of which we put coffee powder mixed with chickory and add hot water.

Decautcion liquid fills in the bottom container.

Use that liquid to mix in milk and hot water to make coffee

I am from a tier 4 town in Kerala. We have some small traditional coffee grinding shops (mills or whatever you call them) near our place.
They usually have the coffee beans, coffee grinding machines and chickory (separate sacks) to mix in the desired quantity.
They have different brands/types/varities of coffee beans.

We can buy coffee poder and chickory separately and mix them. Usually it is in 60-40 or 70-30 ratio.
Like for 2kg coffee powder, 500 gm chickory or so. I don't know the specific brand name but I can try to get that.

In Bangalore people generally prefer a 70-30 or 80-20 ratio.

You generally get this in the 15 rupees filter coffee restaurants
 
I use a stainless steel pour over coffee dripper. But it is SLOW due the filter design and by the time I complete the pour, coffee is not hot. 🙁

Any good stainless steel dripper/filter, you can suggest?
 
I bought the ‘Dhaka Blend’ from Blue Tokai Coffee Roasters yesterday. I’ll be using it for making Cold Brew.

Will post a review here after the first batch is made.
