Question about drawing cash using cheque

I want to pay a person, but he insist on giving him cash. I want to have a record of his name atleast in my bank statement. Does giving cheque on his name, will he be able to withdraw cash and also his name will be visible on transaction details in my bank statements?
He is asking to give self cheque, but again its the same as giving him cash directly, as there wont be any evidence in future.

Give him a cheque without a/c payee or crossing it. With his name and the amount and he can go to the bank branch withdraw cash and his name will be seen in your account statement.
I used to do with my contractor during my room remodeling as a proof of payment.

Any branch is ok..

Bank will also ask his aadhar card for verification

Depends on value and the branch employee. Once for 20k hdfc didn't ask a single thing but at idfc bank branch they did ask for aadhar.
