What Information Can Merchant See When I make a payment?

So, i really like to Google Pay or Amazon Pay. But Google Pay uses email as UPI and Amazon pay is phone number. I can't really use actually custom UPI. So i am wondering can merchants see full UPI id? Or phone number? What information they can see when they get paid? I don't care if they know my name tho.

Small vendors don't care that much

Ya kundali banwani hai

Bhai details se farq padta hai.. imagine your sister uses paytm or anyother app which uses mobile number as UPI id, I am not saying all vendors are bad but bad ones still exist, like remember a few months back, zomato delivery rider texted and harassed a lady customer after midnight because he found her attractive! I don't want anyone to know my number or email id.
Its a good thing companies have separate call lines when interacting with driver/riders
