It threw me for a hot minute last month too!
This happened to me last month. Once the transaction settles it will correctly show as Aug 1.

Amex app has quite glitches.. let the transaction settle and it'll show the date 1st August...

This happened to me with MRCC
I bought 4x1500 Amazon pay on the 1st January around 1:00 a.m. during a New years party and the transaction was showing as 31 December and I did not get the 1000 bonus points.
I think their clock runs on USA time
after multiple emails and complaints, I managed to get it.
But frankly it is not worth the trouble for just 1000 points worth 333 rupees
I recommend you do the transactions on second of the month to be 100% sure, because it is quite likely that their clock runs on USA time, so it is 12 hours behind
kindly mark this as your solution because I have got first hand experience of all the trouble l faced and time I wasted for that petty cash

This happened with me last year, Customer care said as Amex is a international brand they follow 2pm for the day closure… sometimes it get correct but sometimes it don’t. In future try to do transaction after 2pm

Yes.. it happened to me as well.. as amex servers are in US( or it's from US . Not sure what's the reason) .. they said after 1.30 Pm it will consider as the current day
So everytime I do 1st of every month txn after 2..
Even this month I tried 1 rs txn.. it posted on 31st July.. so waited until 2 pm for gift card purchase

I had done transactions at 12-2.30am on August 1. Settled today as August 1

No problem I did the same last month was worried but after settlement the points was credited don't worry even if it show 31of last month you did it on aug 1 so problems
It updated and i got all my transactions correctly tagged to Aug 1, got the 4x . The 6x is pending cause ive recieved rewards only for 5 of the transactions, still havent recieved the basic reward nor 6x yet and CC said it will update either within 48 hours or i can reach out at month end to get it manually added. Thanks for everyone's responses and for providing clarity.
